An absolutely delicious vegetarian recipe. Simple, healthy using only fresh ingredients.
Baked potatoes are loved by everyone, and the mushrooms stuffing brings a festive note. An ideal recipe for a vegetarian meal or as a garnish for a juicy, spicy steak.
- a few medium potatoes
- a red pepper
- 200 gr fresh champignon mushrooms
- some cherry tomatoes for decoration
- pepper, paprika, salt
- olive oil
Wash the potatoes, brush them and bake them at 180 degrees for about 40 minutes.
Meanwhile, fry the mushrooms and the peppers in a little olive oil. Season the filling with salt, pepper, paprika and crushed garlic.
Remove the potatoes from the oven and make cut a small hole in the middle. Fill the potatoes with some of mushrooms filling.
Bake the stuffed potatoes in the oven for another 10-15 minutes, just enough time for all the nice flavors to mix.
Serve directly from a ceramic bowl, after adding the rest of the composition of mushrooms.
Decorate the serving dish with chopped fresh parsley. The potatoes are delicious with a salad of cherry tomatoes.
