Guacamole is a famous Mexican recipe avocado based. Nutritious, flavorful and healthy, the guacamole pasta is served with tortilla chips, sliced baguette or raw vegetables. Guacamole can be green (with parsley) or red (with red onion and tomato pulp).
For today, I suggest a vegetarian meal with Mexican influences, to diversify more the menu for Lent.
Open a ripe avocado, remove the core and sprinkle it with fresh lemon juice. Mash it with a fork. Add salt, pepper to taste. Crush a clove of garlic and add it to the avocado paste. Finally, add how much lemon juice you like and finely chopped parsley.
Serve it with baguette slices as a snack or appetizer.
