One of the most delicious pasta recipes is cannelloni with spinach and ricotta. Sprinkle with tomato sauce flavored with fresh basil, cover with a generous layer of mozzarella fresca, cannelloni au gratin in the oven is a real tasty treat.
Like any Italian recipe, "cannelloni con spinaci e ricotta" is surprisingly tasty and simple at the same time.
It’s a perfect recipe for a casual but healthy lunch.
-1 box of ricotta
-500 gr fresh spinach
-200 gr mozzarella
Wash the spinach carefully and fry it until gets soft. Then drain and let it cool.
Mix ricotta with beaten eggs.
Add the boiled spinach, previously chopped. Put salt and pepper. I didn't put salt because I put 50 grams of feta (optional).
Boil the cannelloni (only 4 minutes), drain and rinse with cold water.
Begin to fill every tube. Place the cannelloni side by side in a ceramic form greased with olive oil.
Sprinkle with plenty of tomato sauce. Sprinkle basil.
Sprinkle mozzarella generously.
Bake at 200 degrees, for 20 minutes.
