ingredients:
-tender and lean pork meat (or 2 chicken breast)
-a few slices of fresh pineapple
-2 golden apple
-a kiwi
-a banana
-3 tablespoons brown sugar
-olive oil
-a glass of red wine dry or semidry
-an orange and a glass of orange juice
-a red pepper
-a pinch of saffron (optional)
-a tablespoon of flour or maizena (cornflour)
garnish:-basmati rice and saffron

clean and grate apples. fry them in a little oil until you get some sauce and let them soak well.

then strain the sauce. pass apples and turn them into a puree. keep apple sauce.

cut meat in slices.

season with salt, pepper and paprika and then fry them. sprinkle pepper over pork slices.

when slightly brown, add apple sauce.

add brown sugar, stir and let it caramelize.

add red wine. stir and let boil.

after half of the wine evaporates, add 100 ml orange juice (freshly squeezed).

add pineapple cut into cubes and let it simmer in sauce for 1-2 minutes.

then add all other fruits and reduce heat to a minimum.

stir 2 times. fruits should not be cooked for too long, only to let their flavor into the sauce. if you want, you can add a little flour dissolved in 3 tablespoons of water and a little sauce. (thickening sauce is optional and depends on the amount of sauce that remains in the pan)

stir gentle until the sauce gets to desired consistency.

garnish it saffron rice and apple puree (mashed apples mixed with a little wine sauce).

serve hot, with a glass of red wine.

enjoy!
