Provencal sauce is a sauce based on wine and tomato sauce with an aromatic bouquet typical of Provence region (thyme, oregano, rosemary, marjoram). Ideal for chicken, fish, seafood. Can be prepared quickly and easily so you should not fear the difficulty of this recipe.
-a package of chicken liver
-100 ml dry white wine
-100 ml of thick tomato juice (or mashed tomatoes)
-provencal aromatic bouquet: oregano, thyme, rosemary, marjoram
-little dry chilli and garlic (optional if you want more spicy)
Wash chicken livers, drain them and then add into pan with a little olive oil.
Cook for 1-2 minutes constantly stirring.
Sprinkle salt, spices and pour wine.
Turn heat to medium to high and let simmer for a few minutes. Then add the mashed tomatoes.
Cook another 2-3 minutes and it’s ready.
Serve with rice or baked potatoes.
