Gazpacho comes from sunny Spain, being one of their traditional soups. Refreshing, full of vitamins and natural antioxidants (the lycopene in tomatoes), a bowl of gazpacho is perfect for hot days. It can be prepared quickly by simply mixing with the blender and it turns out to be very tasty.
For gazpacho you should use only raw ingredients of the best quality, well-ripped, to offer you an aromatic taste, perfectly balanced.
It is a vegetarian recipe, perfect for all ages, healthy and dietetic.
- 4-5 well-ripped tomatoes
- half of 1 cucumber
- 1 red pepper
- 1 small red onion
- 2 cloves of garlic
- 2 slices of dried bread (the peasant bread with crust is ideal)
- 30 ml extra virgin olive oil of high quality
- 2 tbsp of vinegar
- salt, pepper (to taste)
- fresh basil leaves
- 1/4 cup of water, eventually
Wash well, cut the vegetables and put them into blender. Break the bread and add it in blender. Pour the oil, the vinegar and the water. Season with salt and pepper. Mix for 2 minutes.
Serve it cold, with ice cubes. Finely chop the basil and add it in the end, when you serve it.
Gazpacho can be served immediately or in a few hours. If you want to serve later, cover the bowl tightly and put it in the refrigerator. The flavors will blend perfectly and it will be even better the next day.
