This summer dish is delicious, easy to cook and very healthy. It’s a flavored and colored pot of fresh vegetables, ideal for a light lunch, on a hot day.
- 1/2 kg green beans
- 3-4 spring potatoes
- 1 big green onion
- 1 carrot
- 2 peppers
- 4 small zucchini
- 2 cloves of garlic
- salt, pepper
- 1 cup of thick tomato juice
Chop the onion and carrot and fry them in a bit of oil.
Add the diced potatoes when the onion is glassy.
Add one cup of water and let it boil over medium heat.
In 10 minutes add the green beans.
After the beans have boiled for about 10 minutes, add sliced zucchini and copped pepper. Let it simmer together for another 5 minutes, eventually fill with water.
When all the vegetables are almost boiled, add the tomato juice. Let it boil a few minutes more, until the sauce reduces.
Finally, add the chopped dill and parsley.
Stir. The pot of vegetables is ready now.
