Pinoli hummus is a delicious and healthy Arabian appetizer. Chickpeas paste with tahini is very nutritious dietary.
Let the chickpeas beans to soak in cold water over night. Then dispose the water and boil them for 1-2 hours, until the beans are well tendered.
Drain the beans and keep the juice in which they boiled.
Make a puree of chickpeas, some broth, olive oil and sesame paste (tahini).
Put some lemon juice, salt, ground garlic. Mix until it's very fine.
Garnish with parsley or finely chopped coriander, paprika, and Pinoli.
