-salmon fillets (the no of people invited at the table)
-mix of dry Provencal herbs
-half a large lemon
-2 cloves of garlic
Grease a bowl with olive oil, place the salmon. Sprinkle salt, pepper. Squeeze the lemon over salmon. Grind the garlic and generously brush the salmon to form a fine crust of crushed garlic. You can leave a little more garlic here and there, for visual detail.
Generously sprinkle Provencal herbs. Cut cherry tomatoes in half and place them with the pulp over salmon. This is how they will remain juicy and will not dry out. Plus they will have an incredible aroma of garlic and Provencal herbs.
Cover the pan with aluminum foil and bake at 180 degrees for 30 minutes.
Remove the foil and let it bake in the turned off oven for a little while.
Serve warm, to feel the flavors better. Accompany the preparation with a cool, floral-fruity rose wine.
