the famous recipe for hummus (or "hommos") is widespread throughout the middle east. lebanon and israel dispute the originality of this ancient recipe.
the hummus is a very healthy and nutritious food, served as a mezze with pita. there are many versions of hummus, with various spices or herbs, but today we merely present the basic recipe.
hummus is a paste made of mixed boiled chickpeas with tahini (sesame paste), lemon juice, olive oil, salt and garlic. in addition you can add cumin, parsley, paprika, pepper, pine nuts, roasted lamb, etc..
first wash the dry chickpeas beans. then leave them in a pot with cold water for 12 hours (overnight). they will double their volume and will boil easily.
drain the chickpeas and boil them in salted water for 1-2 hours, until they become soft. then strain them and keep the juice.
remove the shells. mix the chickpeas beans with a little broth in which they boiled. add olive oil (2 tablespoons), juice from one lemon.
put 1-2 tablespoons of sesame paste (tahini), 1-2 cloves of ground garlic. mix until you get a very smooth puree.
fill the serving bowl with hummus. sprinkle with olive oil; sprinkle chopped parsley and paprika when serving.
serve cold. it stays well in refrigerator.
serve with pita.
