One of the most appetizing cuisines, the Italian one, delights us with special recipes, easy, flavorful and very healthy. The following recipe is absolutely delicious. The Mediterranean flavors complement each other perfectly and will provide a unique vegetarian menu. The crispy pine nuts (Pinoli) and juicy and sweet cherry tomatoes add fantasy and authenticity to this spinach recipe.
What is wonderful about the Italian recipes is that ingredients are not prepared for a long time, just enough to combine flavors and to finalize the taste.
-half a kilo of fresh spinach
-10 cherry tomatoes
-a handful of pine nuts
-3-4 tablespoons of thick tomato juice (passata di pomodoro)
-quality olive oil
-a few cloves of garlic
Heat 2 tablespoons of oil and fry the sliced garlic gently.
Add pine sprouts, stir a few times (for the pine buds not to burn) and then add tomatoes cut in two.
Stir for 1-2 minutes, then add the tomato juice.
Wash the spinach well and drain, then cut it in pieces, if it has large leaves. If it’s young, you can leave it as it is. Add the spinach and let it simmer with the vegetables. Sprinkle salt and pepper to taste.
It is ready within minutes. Turn off the heat when the sauce boiled down to half (spinach must not boil too much).
When serving, you can sprinkle the food with a grain of olive oil for extra taste.
Serve with fresh bread, preferably a full ciabatta with olives.
