Today we propose an unusual salad, ideal for a casual lunch or a healthy snack. In pastel colors of spring, with a subtle aroma, refreshing taste and creamy at the same time, this salad is a delight and elegant gourmet.
Avocado provides a creamy and smooth texture, and carrots and grated apple offer a juicy-crisp contrast. The sauce is silky, based on yogurt, honey, lemon, apple cider vinegar and grape seed oil, perfect to facilitate the vitamins absorption.
-a green apple
-a small yogurt (can be with cereals)
-a tablespoon of honey (for flavor)
-a teaspoon of apple cider vinegar
-a teaspoon grape seed oil
-optional: wheat germ or other cereal flakes
Cut the avocado in half, remove the core and keep the pulp. Drizzle with lemon juice immediately, so that it does not oxidize, and cut the lemon in cubes. Grate the carrot and the apple and sprinkle with lemon juice.
Mix ingredients thoroughly.
Add the yogurt sauce.
Stir, add corn flakes, if desired.
Fill the avocado halves and serve with salad. If you want extra fiber and vitamins, then powder the salad with wheat germ flakes.
