at the beginning of the year we will present a series of dietary recipes, very easy to prepare, tasty and predominantly vegetarian to help you return to the figure before the holidays.
for today: "baked assorted vegetables" in olive oil sauce, lemon, garlic, pepper and oregano. very simple and good! spices aroma will enchant your smell when you get them from the oven and the baking technique (with very little oil) will provide a healthy preparation.
if you do not have an exclusively vegetarian lunch, then you can use these vegetables as a garnish next to a hot steak with spicy sauce.
ingredients:
-3 potatoes
-1 red pepper
-5-6 mushrooms
-2 zucchini
-olive-oil
-lemon juice
-dried oregano
-pepper
-salt
first we prepare the potatoes. they have longer baking time, so we put them first. cut the potato slices, then brush them with a little olive oil, sprinkle salt, pepper and oregano and give the tray in the oven at 180 degrees for 15 minutes.
then remove the pan from the oven. potatoes are almost done.
add mushrooms, pepper and lemon juice. over each layer of vegetables put salt and spices.
finally, put a layer of zucchini slices. sprinkle with oil again and sprinkle spices.
add 100 ml of water and put in the oven for another 15 minutes.
the cooked vegetables are served warm with grilled or baked mushrooms.
