Today we make pizza! And because we want to be as authentic, we have carefully chosen the ingredients (fresh grown "bio"). What do we need more? We need a little time to play with the dough and good mood as we cook "cucina Italiana" style … and a loooot of appetite for pizza.

This pizza is the thick crust version, but you can stretch it as thin as you like.
It's easy and fun to make pizza at home.

- 400 grams pizza flour (wheat flour mixed with dried and ground oregano)
-200 ml warm water
-2 tablespoons olive oil
-1 teaspoon of salt
-half a small cube of fresh yeast

Dissolve the yeast in warm water.

Sift the flour into a plastic bowl. Then make a hole in the middle, where you pour the water with yeast.

Add the olive oil. Start to mix gently, gradually incorporating the flour. Salt is added to the end, when the dough is almost ready. Knead for a few minutes. Finally, the dough should be supple. If you feel that it isn't enough, supplement the amount of oil.

Cover with a kitchen towel and let the dough "rest" for 30 minutes at room temperature. It will grow nicely.

Meanwhile, prepare the tomato sauce and cut the topping ingredients.

The sauce can be "passata di pomodoro" (thick tomato sauce) ready-made or bought from a supermarket or 'fresco' (made at home from fresh ingredients). Obviously we will do the "fresco".

Cut the ripe tomatoes in slices and put them in blender. Add a few slices of red pepper, some Italian basil leaves, a few leaves of oregano, 2-3 tablespoons olive oil, a pinch of salt and black pepper. Mix for a few seconds.

The resulting sauce should be thick and not too fine.

Now check the dough. It grew well and should be stretched now.

Spread the dough with your hands (pressing on the edges and pulling it) in a thin round or rectangular metal tray (leads the heat quickly).

Important: don't stretch the pizza dough with a paddle! There is no problem if it's not perfect, it will look good in the end.

If you want a thick crust, stretch less; if you want it thinner, stretch more. Note that it will grow in the tray.

Pour sauce over pizza, spread it in a thin layer, avoiding the edges. Put the ingredients you like: bacon, olives, peppers, tomatoes, sardines, tuna, corn, etc..

Sprinkle grated mozzarella at the end.

Put it in the oven to 230 degrees on the middle rack for 15-25 minutes (if the crust is thin keep it less; if thicker, keep more).

Serve immediately. You can decorate with cherry tomatoes and fresh basil leaves.
