The eggplant salad is appreciated by many people, each country having its own version. This Turkish recipe is very easy to prepare and incredibly tasty.
- 2 baked eggplants
- olive oil
- a lemon
Mince the eggplants, add them to the mixer together with garlic, a tablespoon of oil, one tablespoon of yogurt, salt and lemon juice. Mix well. Gradually add oil, to taste. Do the same with the amount of yogurt.
If you want, you can add a tablespoon of ground nuts in the mix.
Decorate with finely chopped nuts and sprinkle the salad with olive oil or, if you have, with peanut oil.
The spicy version includes some spicy baked chili peppers.
